      Farewell to a Little French legend

      We are saddened to farewell a little french legend, one of our team members, Romuald or Rom joined us from France (as some of you might know), the parisians suburbs to be more exact. This is where love and passion was born. A passion for traveling and discovering his country brought him to discover his love for food. From there he enrolled in a culinary school in Paris and learned cooking, cocktail making, wine tasting.. To the point of graduation. After working a few years in Paris his passion for traveling was called again but this time for something a little bigger. In June he decided to fly to Vancouver (British Columbia, Canada) to learn English (he was not speaking a word), work and discover a new country. As you can imagine the first few weeks were a little rough but with determination, a big smile, and brn english married with a thick french accent he found a job and friends - The rest is history! After a few years in Canada he decided to come home to Paris. After a few months back home his appetite for adventure wasn't over yet. In 2015 he arrived on the shore of beautiful Aotearoa and made it his home. And now after 18 years working in hospitality he decided to change careers. Before his retirement from the industry he wanted to share one last gift .

      In fact, Rom would love to share one of his favorite dishes with us! Below, you'll find the recipe for his idea of a great evening (he also added you need friends or family to enjoy to its fullest)

      Rom’s Raclette night:

      Ingredients:

      • Raclette cheese (500-600g per person)

      • Potatoes, boiled and sliced

      • Cornichons (pickled gherkins)

      • Pickled onions

      • Prosciutto or other cured meats

      • Baguette, sliced

      • Black pepper

      • A few bottles of wine

      • Any vegetables you like

      Equipment:
      • Raclette grill

      • Raclette pans or trays

      • Spatula or scraper

      Instructions:

      • Preheat your raclette grill.

      • Cut the raclette cheese into thin slices, and arrange them on the raclette pans/trays.

      • Each person should have their own pan/tray.

      • Place the raclette pans or trays on the raclette grill, and cook until the cheese is melted and bubbly. (While cheese is melting poor yourself a glass of wine - cheers)

      • Use a spatula or scraper to scrape the melted cheese onto the boiled potatoes and other accompaniments.

      • Serve the raclette with sliced baguette, cornichons, pickled onions, and prosciutto or other cured meats.

      • Sprinkle with black pepper to taste. (have a drink)

      • Enjoy the warm, gooey cheese with your chosen accompaniments. (have another drink as you probly burnt your mouth- you didn’t wait long enough for the cheese to cool down)
